REGULAR CHECK/CHECK POINTS:
– Hairs are short and trimmed
– Nails are short, no nail polish
– Clean apron is being worn while handling food
– No jewelry is worn
– Hand washing in potassium permanganate water
– Staff not suffering from any disease and medically certified
– Avoid any unhygienic habits
– All items are preserved as per standard norms
– Check and adhere to self life of all raw materials
– Floor is kept clean, free from spills and obstructions
– All equipment are cleaned as per four step cleaning method (scrub, rinse, sanitize and dry)
– No unauthorized person is allowed to enter the kitchen
PERIODICAL CHECKS:
– Crockery & cutlery are dipped in chemical solutions for 12-14 HOURS
– Comprehensive cleaning of floor and kitchen equipment
– Cleaning of fly catcher
– Medical checkup of every staff
– Pest control and fumigation
WASTE MANAGEMENT:
– Separate bins are used for no-bio-degradable and bio-degradable waste.
– Bins are kept clean and covered
– Bins are changed periodically
– Trash containers are cleaned and emptied regularly
